Barbecue Sauce a la Emil Villa’s

This is an attempt to recreate the unique BBQ sauce from Emil Villa’s on Telegraph Ave in Berkeley from a couple of decades ago. The texture is correct, but my taste memory is rather vague. Course, like any sauce, you can add your own touches: lots of hot chile peppers, Mexican oregano, more vinegar, mayo, etc. The key to this recipe is that it does not rely on tomatoes for texture or as a major flavor component.


1Combine all ingredients in a microwave safe bowl

2Heat on high for 2 minutes, stirring halfway through.

3If it does not have an oily, slightly thickened texture (think bottled oil & vinegar dressing), heat an additional minute and stir. Repeat if necessary.

4Sauce may be refrigerated and re-heated
